Ingredients
  

Soup Base
  • 1 tablespoon olive oil for sautéing
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 teaspoon Italian seasoning
  • 4 cups chicken broth low sodium
  • 1 cup heavy cream for creaminess
  • 2 cups cooked chicken shredded
  • 1 package gnocchi about 16 oz
  • 1 cup spinach fresh, chopped

Method
 

Prepare the Soup
  1. In a large pot, heat the olive oil over medium heat.
  2. Add the diced onion, carrots, and celery; sauté for about 5 minutes until softened.
  3. Stir in the minced garlic and Italian seasoning; cook for an additional minute.
  4. Pour in the chicken broth and bring to a simmer.
  5. Add the shredded chicken and gnocchi; cook for about 5-7 minutes until gnocchi is tender.
  6. Stir in the heavy cream and spinach; cook for another 2-3 minutes until heated through.
  7. Season with salt and pepper to taste.
