Ingredients
  

Chicken
  • 4 pieces chicken breasts boneless and skinless
Glaze
  • 1 cup peach preserves preferably all-natural
  • 2 tablespoons jalapeño pepper finely chopped
  • 1 tablespoon soy sauce low sodium
  • 1 teaspoon lime juice freshly squeezed
  • 1 teaspoon garlic powder
Seasoning
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon paprika

Method
 

Prepare the Glaze
  1. In a saucepan over medium heat, combine peach preserves, chopped jalapeño, soy sauce, lime juice, and garlic powder. Stir until well mixed and bring to a simmer.
  2. Reduce heat and let the glaze simmer for about 5 minutes until slightly thickened. Remove from heat and set aside.
Season the Chicken
  1. In a mixing bowl, combine salt, black pepper, and paprika. Rub the seasoning mixture evenly over the chicken breasts.
Cook the Chicken
  1. Preheat the grill to medium-high heat. Place the seasoned chicken breasts on the grill and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C).
  2. During the last few minutes of cooking, brush the chicken with the peach glaze.
Serve
  1. Remove the chicken from the grill and let it rest for 5 minutes before serving. Drizzle with additional glaze if desired.
