Ingredients
  

  • 4 pieces chicken thighs, boneless and skinless
  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 piece mango, diced
  • 2 cups cabbage, shredded
  • 1 piece red bell pepper, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 piece lime, juiced
  • salt and pepper to taste

Method
 

  1. Preheat the grill to medium-high heat.
  2. Rub chicken thighs with jerk seasoning and olive oil.
  3. Grill chicken for 6-7 minutes on each side until fully cooked.
  4. Combine diced mango, cabbage, bell pepper, and cilantro in a bowl.
  5. Whisk together mayonnaise, honey, lime juice, salt, and pepper until smooth.
  6. Toss the honey lime dressing with the mango slaw mixture.
  7. Slice the grilled chicken and serve over the mango slaw, drizzling with additional honey lime cream.
