Lemon Chicken Pasta

Ingredients
  

Pasta
  • 12 oz linguine or spaghetti
Chicken
  • 1 lb boneless, skinless chicken breasts sliced into strips
  • 1 tsp salt to season chicken
  • 1 tsp black pepper to season chicken
Sauce
  • 3 tbsp olive oil for cooking
  • 3 cloves garlic minced
  • 1 cup chicken broth low sodium
  • 1 lemon juice and zest freshly squeezed
  • 1/2 cup heavy cream for richness
  • 1/4 cup parmesan cheese grated
  • 2 tbsp fresh parsley chopped, for garnish

Method
 

Cook the Pasta
  1. In a large pot, bring salted water to a boil. Add the linguine and cook according to package instructions until al dente. Drain and set aside.
Cook the Chicken
  1. In a skillet, heat olive oil over medium heat. Season the chicken strips with salt and pepper, then add to the skillet. Cook for 5-7 minutes until golden brown and cooked through. Remove chicken and set aside.
Make the Sauce
  1. In the same skillet, add minced garlic and sauté for 1 minute until fragrant. Pour in chicken broth, lemon juice, and lemon zest. Bring to a simmer.
  2. Stir in heavy cream and grated parmesan cheese. Cook for another 2-3 minutes until the sauce thickens slightly.
Combine and Serve
  1. Add the cooked pasta and chicken back to the skillet. Toss to coat in the sauce. Cook for an additional 2 minutes to heat through.
  2. Garnish with fresh parsley before serving.

Notes
