Lemon Garlic Chicken Zoodles

Ingredients
  

  • 2 boneless, skinless chicken breasts sliced
  • 3 medium zucchinis spiralized
  • 4 cloves garlic minced
  • 2 tablespoons lemon juice freshly squeezed
  • 2 tablespoons olive oil
  • ¼ cup Parmesan cheese grated (optional)
  • ½ teaspoon red pepper flakes adjust to taste
  • Salt to taste
  • Pepper to taste
  • Fresh basil for garnish (optional)

Method
 

  1. Season chicken slices with salt, pepper, and red pepper flakes.
  2. Heat olive oil in a skillet over medium-high heat. Sauté chicken until golden brown (about 5-7 minutes). Once cooked through, remove it from the skillet and set aside.
  3. In the same skillet, add minced garlic and sauté for about 30 seconds until fragrant. Then add spiralized zucchini and cook for 2-3 minutes until slightly tender.
  4. Return chicken to the skillet along with lemon juice. Toss everything together to ensure each piece is coated in that zesty sauce.
  5. Plate your creation and garnish with Parmesan cheese and fresh basil if desired.
