Ingredients
  

Beans
  • 2 cups canned chickpeas drained and rinsed
  • 1 cup canned black beans drained and rinsed
  • 1 cup canned kidney beans drained and rinsed
Vegetables
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red onion finely chopped
  • 1/4 cup fresh parsley chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice freshly squeezed
  • 2 teaspoons za'atar
  • 1 clove garlic minced
  • 1/2 teaspoon salt to taste
  • 1/4 teaspoon black pepper to taste

Method
 

Prepare the Beans
  1. In a large mixing bowl, combine the chickpeas, black beans, and kidney beans.
  2. Gently toss to mix the beans evenly.
Add Vegetables
  1. Add the cherry tomatoes, cucumber, red onion, and parsley to the bowl with the beans.
  2. Toss the mixture gently to combine all the ingredients.
Make the Dressing
  1. In a separate bowl, whisk together the olive oil, lemon juice, za'atar, minced garlic, salt, and black pepper.
  2. Taste and adjust seasoning if necessary.
Combine and Marinate
  1. Pour the dressing over the bean and vegetable mixture.
  2. Toss well to coat all ingredients with the dressing.
  3. Let the salad marinate for at least 15 minutes before serving.
