A delicious salmon dish with a spicy, creamy sun-dried tomato sauce, perfect for impressing guests.

Ingredients
  

  • 3-4 fillets salmon skin removed
  • 2 tbsp olive oil
  • 1 tsp dried basil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp dried thyme
  • 3/4 tsp red pepper flakes
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1 cup chicken stock unsalted
  • 1/2 cup heavy cream
  • 1/3 cup chopped sun-dried tomatoes
  • 5 cloves garlic minced
  • 1/2 cup freshly shredded parmesan cheese
  • fresh basil for garnish

Method
 

  1. Prepare the seasoning mix by combining dried basil, garlic powder, onion powder, dried thyme, red pepper flakes, salt, and black pepper in a small bowl.
  2. Rub half of the seasoning mix into both sides of the salmon fillets.
  3. In a large skillet over medium-high heat, add olive oil until hot. Sear the salmon fillets flesh side down for about five minutes on each side.
  4. Remove the seared salmon from the pan and set aside. In the same skillet, add minced garlic and chopped sun-dried tomatoes and sauté for 1-2 minutes.
  5. Pour in the unsalted chicken stock to deglaze the pan, scraping up any brown bits.
  6. Add heavy cream and parmesan cheese along with the remaining seasoning mix, stirring until combined.
  7. Simmer the sauce for about 10-15 minutes until thickened, adjusting seasoning as needed.
  8. Return the salmon fillets to the skillet, spooning sauce over them, and cook for an additional 3-5 minutes.
  9. Serve immediately, garnished with fresh basil leaves.
