Ingredients
  

Noodles
  • 8 oz egg noodles or any preferred noodles
Beef Mixture
  • 1 lb ground beef 80/20 blend for flavor
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 cup carrots julienned
  • 1 cup bell pepper sliced
  • 1 cup green onions chopped
Sauce
  • 1/4 cup soy sauce low sodium preferred
  • 2 tbsp hoisin sauce
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water

Method
 

Prepare Noodles
  1. Boil water in a pot and cook the egg noodles according to package instructions until al dente. Drain and set aside.
  2. Drizzle a little oil on the noodles to prevent sticking.
Cook Beef and Vegetables
  1. In a large skillet, heat a tablespoon of oil over medium-high heat.
  2. Add the ground beef and cook until browned, breaking it apart with a spatula, about 5-7 minutes.
  3. Add the chopped onion and minced garlic, sauté for 2-3 minutes until softened.
  4. Stir in the carrots and bell pepper, cooking for another 3-4 minutes until vegetables are tender.
Combine and Serve
  1. In a small bowl, mix together the soy sauce, hoisin sauce, sesame oil, rice vinegar, and cornstarch mixture.
  2. Pour the sauce over the beef and vegetable mixture, stirring to combine and cook for an additional 2 minutes until the sauce thickens.
  3. Add the cooked noodles to the skillet, tossing everything together until well combined.
  4. Garnish with chopped green onions before serving.
