Peel and finely chop the apples. Combine with brown sugar, ground cinnamon, and salt in a medium bowl. Let sit for a few minutes.
In a skillet, melt the unsalted butter over medium heat. Add the apple mixture and cook for 5-7 minutes until softened. Remove from heat and let cool slightly.
Preheat the oven according to biscuit dough instructions. Flatten each biscuit into a round disk about 4 inches wide.
Place a spoonful of the cooled apple mixture and a piece of caramel candy in the center of each biscuit. Fold and seal the edges tightly.
Place on a parchment-lined baking sheet. Brush with melted butter and sprinkle with cinnamon sugar if desired.
Bake in the preheated oven for 15-20 minutes until golden brown and puffed up.
Let cool for a few minutes before serving warm, optionally with vanilla ice cream or extra caramel sauce.
