Method
Prepare the crust
- In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until well combined.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Refrigerate for 15 minutes to set.
Make the filling
- In a separate mixing bowl, beat the softened cream cheese until smooth.
- Gradually add powdered sugar and continue to beat until well combined.
- In another bowl, whip the heavy cream until stiff peaks form.
- Gently fold the whipped cream into the cream cheese mixture until fully incorporated.
- Add peppermint extract and mix gently.
Assemble the pie
- Pour the filling into the prepared crust and smooth the top with a spatula.
- Cover and refrigerate for at least 4 hours, or until set.
Garnish and serve
- Before serving, sprinkle crushed peppermint candies on top of the pie.
