Ingredients
  

Crust
  • 1 cup pitted dates soaked in warm water for 10 minutes
  • 1 cup raw pecans chopped
  • 1/2 cup rolled oats gluten-free if needed
  • 1/4 teaspoon salt
Filling
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil melted
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped pecans for filling
Topping
  • 1/4 cup chopped pecans for garnish
  • 1 teaspoon sea salt for garnish

Method
 

Prepare the Crust
  1. In a food processor, combine the soaked dates, chopped pecans, rolled oats, and salt. Process until the mixture is sticky and holds together.
  2. Line a baking sheet with parchment paper. Scoop out small portions of the crust mixture and press them into bite-sized balls or mini muffin tins.
Make the Filling
  1. In a mixing bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until smooth.
  2. Fold in the chopped pecans until evenly distributed.
Assemble the Bites
  1. Spoon the filling into the prepared crusts, pressing down gently to ensure it holds together.
  2. Sprinkle the tops with additional chopped pecans and a pinch of sea salt.
Chill and Serve
  1. Refrigerate the bites for at least 30 minutes to set before serving.
  2. Enjoy your no-bake pecan pie bites chilled or at room temperature.
