Cook Chicken and Pineapple
- Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook for about 5-7 minutes until browned.
- Add diced pineapple, soy sauce, lime juice, cumin, chili powder, salt, and pepper to the skillet. Stir well and cook for another 5-7 minutes until chicken is cooked through and pineapple is caramelized.
Assemble Tacos
- Warm the corn tortillas in a separate pan or microwave until pliable.
- Spoon the chicken and pineapple mixture onto each tortilla.
- Top with shredded lettuce, diced tomatoes, cheese, and cilantro. Add a dollop of sour cream if desired.
