One Pan Chicken & Pineapple Tacos

Ingredients
  

Chicken and Marinade
  • 1 lb boneless, skinless chicken breasts cut into small cubes
  • 1 cup fresh pineapple diced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon lime juice
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
Taco Assembly
  • 8 small corn tortillas
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1/2 cup shredded cheese cheddar or Mexican blend
  • 1/4 cup fresh cilantro chopped
  • 1/2 cup sour cream for serving

Method
 

Cook Chicken and Pineapple
  1. Heat olive oil in a large skillet over medium heat. Add the cubed chicken and cook for about 5-7 minutes until browned.
  2. Add diced pineapple, soy sauce, lime juice, cumin, chili powder, salt, and pepper to the skillet. Stir well and cook for another 5-7 minutes until chicken is cooked through and pineapple is caramelized.
Assemble Tacos
  1. Warm the corn tortillas in a separate pan or microwave until pliable.
  2. Spoon the chicken and pineapple mixture onto each tortilla.
  3. Top with shredded lettuce, diced tomatoes, cheese, and cilantro. Add a dollop of sour cream if desired.

Notes
