Start by bringing a large pot of salted water to a boil. Add your penne pasta and cook according to the package instructions until al dente. This usually takes about 10-12 minutes. Once cooked, drain the pasta and set it aside, but don't rinse it!
In a large skillet over medium heat, add a splash of olive oil. Once hot, toss in chopped green peppers and sliced mushrooms. Sauté these veggies for about 5-7 minutes, or until they become tender and fragrant.
Push the veggies to one side of the skillet and add your ground beef to the other side. Break it up with a spatula as it cooks until it's browned all over—this should take about 6-8 minutes. Don’t forget to season with salt and pepper!
Once the beef is cooked through, mix everything together in the skillet. Stir in minced garlic and cook for another minute until fragrant. Next, add the cooked pasta into the skillet along with some beef broth or water to help create a luscious sauce.
Lower the heat and sprinkle shredded provolone cheese over the top of your pasta mixture. Cover with a lid for a couple of minutes to allow the cheese to melt into gooey perfection.
Once everything is well combined and cheesy, it's time to serve! Dish out generous portions onto plates or into bowls.
