Potsticker Salad (Dumpling Salad)

Ingredients
  

  • 1 lb frozen gyoza dumplings vegan
  • 1 lb heirloom tomatoes mixed colors
  • 1 each English cucumber or 4 Persian cucumbers
  • 5 each scallions thinly sliced
  • 1 each red chili pepper optional for heat
  • 1/2 cup basil leaves
  • 3 Tbsp Tamari low sodium
  • 2 Tbsp balsamic vinegar
  • 2-3 tsp maple syrup
  • 1 Tbsp toasted sesame seeds for garnish or crispy fried onions

Method
 

  1. Start by steaming the potstickers according to the package instructions. Once done, transfer them to a large bowl and add a teaspoon of sesame oil to prevent sticking.
  2. In a small bowl, combine tamari, balsamic vinegar, and maple syrup. Pour it over the steamed dumplings and gently toss them to coat evenly.
  3. Cut the heirloom tomatoes into wedges and thinly slice your cucumber and scallions. Add all these colorful veggies into the bowl with your dumplings.
  4. Tear fresh basil leaves over the top of your salad and sprinkle toasted sesame seeds or crispy onions for added crunch.
  5. Feel free to add in any extra veggies you like—thinly sliced cabbage or edamame are fantastic options!
