Ingredients
  

Potstickers
  • 12 pieces potstickers store-bought or homemade
Salad Base
  • 4 cups mixed greens such as spinach, arugula, and romaine
  • 1 cup shredded carrots
  • 1 cup cucumber sliced or diced
  • 1 cup red bell pepper sliced
Dressing
  • 3 tablespoons soy sauce low sodium preferred
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 teaspoon honey or maple syrup for vegan option
  • 1 teaspoon sesame seeds for garnish

Method
 

Cook Potstickers
  1. In a skillet over medium heat, add a little oil and cook the potstickers until golden brown on both sides, about 5-7 minutes.
  2. Add a splash of water to the skillet, cover, and steam for an additional 5 minutes until cooked through.
Prepare Salad
  1. In a large mixing bowl, combine the mixed greens, shredded carrots, cucumber, and red bell pepper.
Make Dressing
  1. In a small bowl, whisk together the soy sauce, rice vinegar, sesame oil, and honey until well combined.
Assemble Salad
  1. Pour the dressing over the salad and toss to combine.
  2. Top the salad with the cooked potstickers and sprinkle with sesame seeds before serving.
