Ingredients
  

Crepes
  • 1 cup all-purpose flour
  • 1 cup milk can use almond or soy milk
  • 1 cup pumpkin puree canned or homemade
  • 2 large eggs
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons butter melted, for cooking
Maple Cream Cheese Filling
  • 8 ounces cream cheese softened
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/4 cup powdered sugar optional for sweetness adjustment

Method
 

Prepare the Crepe Batter
  1. In a mixing bowl, whisk together the flour, milk, pumpkin puree, eggs, sugar, vanilla extract, cinnamon, nutmeg, and salt until smooth.
  2. Let the batter rest for about 10 minutes.
Cook the Crepes
  1. Heat a non-stick skillet over medium heat and brush with melted butter.
  2. Pour about 1/4 cup of batter into the skillet, swirling to coat the bottom evenly.
  3. Cook for 2-3 minutes until the edges start to lift, then flip and cook for another 1-2 minutes.
  4. Repeat with the remaining batter, adding more butter to the skillet as needed.
Make the Maple Cream Cheese Filling
  1. In a mixing bowl, beat the softened cream cheese until smooth.
  2. Add the maple syrup, vanilla extract, and powdered sugar (if using) and mix until well combined.
Assemble the Crepes
  1. Spread a generous amount of the maple cream cheese filling onto each crepe.
  2. Fold the crepes in half or roll them up, and serve warm.
  3. Drizzle with additional maple syrup if desired.
