Ingredients
  

  • 1/2 cup creamy unsweetened almond butter
  • 1/2 cup light brown sugar
  • 1 unit egg
  • 1/4 cup pumpkin puree
  • 1 tsp vanilla extract
  • 1/4 cup almond flour packed
  • 2 tsp pumpkin pie spice
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup vegan mini marshmallows
  • 1/2 cup semi-sweet chocolate chips or chunks

Method
 

  1. Preheat your oven to 375 degrees F.
  2. In a large bowl, mix almond butter, brown sugar, pumpkin puree, vanilla extract, and egg until well blended.
  3. In another bowl, whisk together almond flour, pumpkin pie spice, baking soda, and salt.
  4. Combine the wet and dry ingredients, stirring gently until fully combined. Fold in chocolate chips.
  5. Portion out the dough onto a lined baking sheet, adding mini marshmallows on top.
  6. Optional: Sprinkle additional chocolate chips on top before baking.
  7. Bake for 10-12 minutes until lightly golden around the edges. Cool on the baking sheet before transferring to a wire rack.
