Ingredients
  

Salad Base
  • 2 cups cooked rice preferably day-old for crispiness
  • 1 cup cucumber diced
  • 1 cup carrots shredded
  • 1 cup red bell pepper diced
  • 1 cup green onions sliced
Peanut Sesame Dressing
  • 3 tablespoons peanut butter smooth
  • 2 tablespoons soy sauce low sodium
  • 1 tablespoon sesame oil
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon sesame seeds for garnish

Method
 

Prepare the Salad
  1. In a large bowl, combine the cooked rice, cucumber, carrots, red bell pepper, and green onions.
  2. Toss the ingredients together until well mixed.
Make the Dressing
  1. In a small bowl, whisk together the peanut butter, soy sauce, sesame oil, rice vinegar, and honey until smooth.
  2. Adjust the consistency with a little water if necessary.
Combine and Serve
  1. Drizzle the dressing over the salad and toss to coat evenly.
  2. Sprinkle sesame seeds on top before serving.
