Ingredients
  

Roasted Carrots
  • 1 pound carrots peeled and cut into sticks
  • 2 tablespoons olive oil for roasting
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
  • 1 teaspoon fresh thyme optional, for garnish
Whipped Ricotta
  • 1 cup ricotta cheese full-fat for creaminess
  • 1 tablespoon lemon juice freshly squeezed
  • 1/4 teaspoon salt to taste
  • 1 tablespoon honey for sweetness
Hot Honey
  • 1/4 cup honey preferably local
  • 1 teaspoon red pepper flakes adjust for spice preference

Method
 

Prepare the Carrots
  1. Preheat the oven to 425°F (220°C).
  2. In a bowl, toss the carrot sticks with olive oil, salt, and pepper.
  3. Spread the carrots in a single layer on a baking sheet.
  4. Roast in the preheated oven for 25-30 minutes, until tender and caramelized.
Make the Whipped Ricotta
  1. In a food processor, combine ricotta cheese, lemon juice, salt, and honey.
  2. Blend until smooth and creamy, scraping down the sides as needed.
Prepare the Hot Honey
  1. In a small saucepan over low heat, combine honey and red pepper flakes.
  2. Stir gently until warmed and well combined, about 2-3 minutes.
Assemble the Dish
  1. On a serving platter, arrange the roasted carrots.
  2. Dollop the whipped ricotta over the carrots.
  3. Drizzle the hot honey over the top and garnish with fresh thyme if desired.
