Ingredients
  

Vegetables
  • 2 medium zucchini sliced
  • 8 oz mushrooms sliced
  • 1 medium onion sliced
  • 2 cloves garlic minced
Seasoning
  • 2 tbsp olive oil for sautéing
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 1 tsp dried oregano optional

Method
 

Prepare the Vegetables
  1. Wash and slice the zucchini, mushrooms, and onion. Mince the garlic.
Heat the Skillet
  1. In a large skillet, heat the olive oil over medium heat.
Sauté the Onions and Garlic
  1. Add the sliced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onions are translucent.
Add Zucchini and Mushrooms
  1. Add the sliced zucchini and mushrooms to the skillet. Season with salt, pepper, and oregano. Cook for an additional 8-10 minutes, stirring occasionally, until the vegetables are tender.
Serve
  1. Remove from heat and serve warm as a side dish.
