Method
Prepare the Vegetables
- Wash and slice the zucchini, mushrooms, and onion. Mince the garlic.
Heat the Skillet
- In a large skillet, heat the olive oil over medium heat.
Sauté the Onions and Garlic
- Add the sliced onion and minced garlic to the skillet. Sauté for about 3-4 minutes until the onions are translucent.
Add Zucchini and Mushrooms
- Add the sliced zucchini and mushrooms to the skillet. Season with salt, pepper, and oregano. Cook for an additional 8-10 minutes, stirring occasionally, until the vegetables are tender.
Serve
- Remove from heat and serve warm as a side dish.
