Ingredients
  

  • 1 stick butter mostly melted
  • 4 cloves garlic minced
  • 1/2 lemon lemon zest
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper or red pepper flakes
  • 1/2 teaspoon dried thyme
  • 1 tablespoon chives or green onions, sliced
  • 2 tablespoons fresh parsley minced
  • Salt and pepper adjusted to taste
  • 2 steaks your choice of cut
  • Avocado oil for cooking
  • Rosemary sprig optional, for additional flavor
  • Smashed garlic optional, for additional flavor

Method
 

  1. Let the steak reach room temperature, pat it dry, and season with salt, pepper, and minced garlic.
  2. Heat a cast iron skillet over high heat until it’s smoking hot.
  3. Add avocado oil to the skillet and place your seasoned steak in.
  4. Once flipped, add butter, minced garlic, and fresh herbs, spooning the mixture over the steak.
  5. Check for medium-rare doneness at around 130°F using a meat thermometer.
  6. Let the steak rest for at least five minutes after removing from heat.
  7. Mix softened butter with parsley, green onions, Dijon mustard, lemon juice, zest, and spices until creamy.
  8. Slice the steak against the grain and top with cowboy butter before serving.
