Ingredients
  

Chicken and Sauce
  • 4 pieces Chicken Breasts Boneless and skinless
  • 1 can Diced Tomatoes 28 oz can, with juices
  • 1 cup Heavy Cream For creaminess
  • 1 cup Chicken Broth Low sodium preferred
  • 1 tablespoon Olive Oil For sautéing
  • 1 tablespoon Italian Seasoning Dried
  • 1 cup Fresh Basil Chopped
  • 2 cloves Garlic Minced
  • Salt to taste Salt
  • Pepper to taste Black Pepper

Method
 

Prepare Ingredients
  1. Season the chicken breasts with salt and pepper on both sides.
  2. In a skillet, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
Combine in Slow Cooker
  1. Place the seasoned chicken breasts in the slow cooker.
  2. Add the sautéed garlic, diced tomatoes (with juices), chicken broth, Italian seasoning, and chopped basil.
Cook
  1. Cover and cook on low for 4 hours or until the chicken is cooked through and tender.
Finish the Sauce
  1. Once cooked, remove the chicken and stir in the heavy cream into the sauce in the slow cooker.
  2. Return the chicken to the slow cooker and coat with the creamy sauce.
Serve
  1. Serve the creamy tomato basil chicken over pasta or rice, garnished with additional fresh basil if desired.
