Ingredients
  

  • 1.5 lbs beef (top round, eye of round, or flank steak)
  • 0.5 cup soy sauce
  • 0.25 cup Worcestershire sauce
  • 3 tbsp honey
  • 3 tbsp BBQ sauce your favorite brand or homemade
  • 2 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp black pepper
  • 0.5 tsp cayenne pepper adjust to taste
  • 0.5 tsp red pepper flakes optional, for extra heat
  • 1 tsp liquid smoke for that classic smoky flavor

Method
 

  1. Start by selecting your beef cut. Trim any excess fat and slice the beef against the grain into thin strips, about 1/4 inch thick.
  2. In a large mixing bowl, combine soy sauce, Worcestershire sauce, honey, BBQ sauce, smoked paprika, garlic powder, onion powder, black pepper, cayenne pepper, red pepper flakes (if using), and liquid smoke. Whisk until well blended.
  3. Add the sliced beef to the bowl and coat thoroughly. Cover with plastic wrap or transfer to a zip-top bag. Refrigerate for at least 4 hours or overnight.
  4. If using a dehydrator, set it to 160°F (71°C). If using an oven, preheat it to its lowest temperature setting (around 170°F (77°C)).
  5. Remove the beef from the marinade and let excess liquid drip off. Lay out each strip on dehydrator trays or a wire rack in a single layer.
  6. Dry in the dehydrator or oven for 4 to 6 hours, checking periodically until the jerky is firm but slightly pliable.
  7. Once dried to your liking, remove from the dehydrator or oven and let cool completely on a wire rack before storing.
