Method
Prepare the Chicken
- Preheat the oven to 375°F (190°C).
- Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness using a meat mallet.
Make the Cottage Cheese Mixture
- In a mixing bowl, combine the cottage cheese, mozzarella cheese, Parmesan cheese, egg, and Italian seasoning. Mix until well combined.
Cook the Pasta
- In a pot, bring salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
Bake the Chicken
- In a baking dish, place the pounded chicken breasts. Season with salt and pepper.
- Spread the cottage cheese mixture evenly over the chicken breasts.
- Pour marinara sauce over the top of the cottage cheese mixture.
- Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
Serve
- Serve the baked chicken over a bed of cooked pasta, garnished with additional Parmesan cheese if desired.
