Ingredients
  

Chicken
  • 4 pieces boneless, skinless chicken breasts
Cottage Cheese Mixture
  • 1 cup cottage cheese preferably low-fat
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 large egg
  • 1 teaspoon Italian seasoning
Pasta
  • 8 ounces whole wheat pasta or pasta of choice
Sauce
  • 2 cups marinara sauce store-bought or homemade
Seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method
 

Prepare the Chicken
  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts between two sheets of plastic wrap and pound them to an even thickness using a meat mallet.
Make the Cottage Cheese Mixture
  1. In a mixing bowl, combine the cottage cheese, mozzarella cheese, Parmesan cheese, egg, and Italian seasoning. Mix until well combined.
Cook the Pasta
  1. In a pot, bring salted water to a boil and cook the pasta according to package instructions. Drain and set aside.
Bake the Chicken
  1. In a baking dish, place the pounded chicken breasts. Season with salt and pepper.
  2. Spread the cottage cheese mixture evenly over the chicken breasts.
  3. Pour marinara sauce over the top of the cottage cheese mixture.
  4. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the cheese is bubbly.
Serve
  1. Serve the baked chicken over a bed of cooked pasta, garnished with additional Parmesan cheese if desired.
