Ingredients
  

Taco Filling
  • 8 large eggs beaten
  • 1 cup cheddar cheese shredded
  • 1 cup cooked sausage crumbled
  • 1 cup bell pepper diced
  • 1 cup onion diced
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper to taste
Taco Shells
  • 8 small corn tortillas or flour tortillas
Toppings
  • 1 cup sour cream for serving
  • 1 cup salsa for serving
  • 1 cup avocado sliced

Method
 

Prepare the Filling
  1. In a skillet over medium heat, sauté the diced onion and bell pepper until soft, about 5 minutes.
  2. Add the crumbled sausage and cook until browned, about 5 minutes.
  3. In a mixing bowl, combine the beaten eggs, salt, and pepper. Pour the egg mixture into the skillet and scramble until fully cooked.
Assemble the Tacos
  1. Preheat the oven to 375°F (190°C).
  2. In a baking dish, arrange the tortillas and fill each with the egg mixture. Top with shredded cheddar cheese.
Bake the Tacos
  1. Bake in the preheated oven for 15 minutes, or until the cheese is melted and bubbly.
Serve
  1. Remove from the oven and serve hot with sour cream, salsa, and avocado on the side.
