Method
Prepare the Marinade
- In a mixing bowl, whisk together soy sauce, honey, rice vinegar, sesame oil, garlic, ginger, and cornstarch until well combined.
- Add the chicken pieces to the marinade and stir to coat. Cover and refrigerate for at least 15 minutes.
Prepare the Skewers
- If using wooden skewers, soak them in water for 30 minutes to prevent burning.
- Thread the marinated chicken and optional vegetables onto the skewers, alternating between chicken and vegetables.
Grill the Skewers
- Preheat the grill to medium-high heat.
- Place the skewers on the grill and cook for about 10-15 minutes, turning occasionally, until the chicken is cooked through and has nice grill marks.
Serve
- Remove the skewers from the grill and let them rest for a few minutes.
- Sprinkle with toasted sesame seeds and sliced scallions before serving.
