Ingredients
  

  • 1 slice bread of choice sourdough, whole grain, or rustic
  • 1 cup cottage cheese
  • 1 cup fresh tomatoes cherry, heirloom, or Roma
  • 1 tablespoon olive oil
  • to taste salt
  • to taste pepper
  • optional fresh basil or microgreens
  • optional red pepper flakes for extra heat

Method
 

  1. Toast the bread until golden and crispy.
  2. Spread a generous layer of cottage cheese on the toasted bread.
  3. Wash and slice the fresh tomatoes.
  4. Arrange the tomato slices on top of the cottage cheese.
  5. Drizzle olive oil over the assembled toast.
  6. Season with salt and pepper to taste.
  7. Add optional toppings like fresh basil or red pepper flakes.
