Ingredients
  

Tofu
  • 14 oz firm tofu pressed and cubed
Orange Sauce
  • 1 cup fresh orange juice
  • 1/4 cup soy sauce or tamari for gluten-free
  • 1/4 cup maple syrup
  • 2 tbsp rice vinegar
  • 1 tbsp cornstarch mixed with 2 tbsp water
  • 1 tbsp sesame oil
  • 1 clove garlic minced
  • 1 inch ginger grated
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup broccoli cut into florets
  • 1 cup snap peas
For frying
  • 1 cup cornstarch for coating
  • 2 cups vegetable oil for frying

Method
 

Prepare Tofu
  1. Press the tofu to remove excess moisture, then cut it into bite-sized cubes.
  2. Coat the tofu cubes in cornstarch until evenly covered.
Fry Tofu
  1. Heat vegetable oil in a frying pan over medium-high heat.
  2. Fry the coated tofu cubes until golden and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.
Make Orange Sauce
  1. In a mixing bowl, whisk together orange juice, soy sauce, maple syrup, rice vinegar, sesame oil, garlic, and ginger.
  2. Add the cornstarch mixture and stir until well combined.
Cook Vegetables
  1. In the same frying pan, add the bell pepper, broccoli, and snap peas. Stir-fry for about 5-7 minutes until tender.
Combine and Serve
  1. Add the crispy tofu back into the pan with the vegetables.
  2. Pour the orange sauce over the tofu and vegetables, stirring to coat evenly. Cook for an additional 2-3 minutes until the sauce thickens.
  3. Serve hot over rice or noodles.

Notes
