Ingredients
  

Noodles
  • 8 oz lo mein noodles or any egg noodles
Vegetables
  • 1 cup bell pepper sliced
  • 1 cup carrots julienned
  • 1 cup broccoli florets
  • 1 cup snap peas
Sauce
  • 3 tbsp soy sauce low sodium
  • 1 tbsp sesame oil
  • 1 tbsp hoisin sauce
  • 1 tbsp rice vinegar
Garnish
  • 2 tbsp green onions chopped
  • 1 tbsp sesame seeds optional

Method
 

Cook Noodles
  1. Bring a large pot of salted water to a boil. Add the lo mein noodles and cook according to package instructions until al dente, about 5-7 minutes.
  2. Drain the noodles in a colander and rinse with cold water to stop the cooking process. Set aside.
Stir-Fry Vegetables
  1. In a wok or large skillet, heat sesame oil over medium-high heat. Add the bell pepper, carrots, broccoli, and snap peas. Stir-fry for about 5-7 minutes until the vegetables are tender-crisp.
Combine and Serve
  1. Add the cooked noodles to the vegetables in the wok. Pour in the soy sauce, hoisin sauce, and rice vinegar. Toss everything together until well combined and heated through, about 2-3 minutes.
  2. Serve immediately, garnished with chopped green onions and sesame seeds if desired.
